Rogan josh

Ingredients

  • Once Jyoti's Meal Bag Rogan josh

  • 600 grams chicken thighs or lean lamb, cut into large pieces

  • 4 tablespoons olive oil

  • 2 tablespoons yogurt

  • 2 tablespoons of butter

  • Sea salt to taste

Preparation

Step 1


Mix spice blend 1 with a tablespoon of yogurt and a tablespoon of olive oil. This is your marinade. Add the meat, mix everything well, and let it marinate, covered, in the fridge for at least 15 minutes.


Tip: If making the dish with lamb, soak the meat first in 500 ml of milk for extra tenderness. After 45 minutes, remove the pieces from the milk, mix them with the marinade (do not rinse off the milk!), and let them marinate, covered, in the fridge for at least 15 minutes.


Step 2


Peel the garlic and finely chop it. Dice half of the tomatoes. Puree the tomatoes with the garlic, fried onions, and spice blend 2 using a stick blender or a regular blender until smooth. This is your base sauce. Set aside.


Step 3


Heat two tablespoons of olive oil with two tablespoons of butter over medium heat in a sturdy pan. Chop the coriander stems finely. Once the butter has melted, add the coriander stems, bay leaf, the base sauce from step 2, and a tablespoon of yogurt. Stir well and let it simmer on low heat for 5 minutes.


Step 4


Cut the remaining tomatoes in half lengthwise, then slice the halves thinly. Peel the shallots and trim both ends. Add the tomato slices and the whole shallots to the sauce. If making the dish with chicken, add 300 ml of boiling water; if with lamb, add 200 ml. Stir well.


Step 5


If making the dish with chicken, heat a frying pan with two tablespoons of olive oil over medium heat. Lightly brown the marinated meat on all sides, then add it to the sauce. If making the dish with lamb, you can skip this step and add the meat directly to the sauce. Stir the sauce well, bring it to a boil, then cover and let it simmer on low heat for 20 minutes, stirring occasionally. Season with salt to taste.


Step 6


Bring 600 ml of water to a boil in a pan and add the rice. Let the rice cook for 10 minutes, then drain. Return the rice to the pan, cover with a lid, and set aside.


Step 7


Finely chop the coriander. Place it in a small bowl on the table and serve alongside the Rogan Josh and rice. For extra heat, provide each person with a green chili (in India, people simply bite off a piece!). Itā€™s also delicious with cucumber slices and lime wedges.
