Ingredients
One time Jyoti's spice mix for Pulled Chicken Tandoori Masal or Achari Masal
500 grams of chicken thighs
1 bay leaf
1 half stalk of celery
1 medium onion
4 cloves of garlic
2 tomatoes
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black peppercorns
1 red pepper (optional, for a spicy version)
Preparation
Step 1
Wash the half stalk of celery and cut it in half. Peel the onion and cut it into quarters. Peel two cloves of garlic. Place a pot with 1.5 liters of water, the bay leaf, celery, a quarter of the onion, the garlic cloves, peppercorns, and salt on high heat and bring to a boil. Optionally, you can add a halved red chili pepper for spicy pulled chicken!
Step 2
Once the water is boiling, add the chicken and bring it back to a boil. Let it simmer for 30 minutes over medium heat, then turn off the heat. Let the chicken sit in the water for another 10 minutes. Remove the chicken from the water and pull the meat apart with two forks. Make sure there are no large pieces of chicken left.
Step 3
Peel and press the remaining two cloves of garlic. Finely chop the rest of the onion. Cut the tomatoes into small pieces. Place a frying pan over medium heat and heat two tablespoons of olive oil. Add the onion and cook for a few minutes until translucent. Add the garlic and cook for another minute while stirring. Add the tomato pieces and cook for a few minutes with the lid on the pan until the tomato is soft.
Step 4
Add the Pulled Chicken spice mix, stir through, and cook for another 30 seconds. Now add the chicken and stir well. Let it cook for 3 to 4 minutes while stirring. Season with salt.
