A whole chicken
The contents of a jar of Green Chili Chutney: Parsley & Mint
3-4 cloves of garlic
500 grams of cauliflower
300 grams of potatoes
200 grams shallots
2 stalks of celery
2 winter carrots
50 ml olive oil
Sea salt to taste

Step 1
Peel the garlic and chop it finely. Peel the shallots. Wash the potato, celery, and carrot, and cut them into cubes. Wash the cauliflower and cut it into bite-sized florets. Place all the vegetables together with the olive oil in a baking dish and toss them well.
Step 2
Score the chicken with a sharp knife in a crosshatch pattern. Rub it with the chutney. Place the chicken on top of the vegetables and let it marinate for 1.5 hours.
Step 3
Preheat the oven to 180Ā°C. Sprinkle the chicken and vegetables with sea salt to taste. Place the baking dish in the center of the oven. The cooking time depends on the weight of the chicken: 45 minutes per 500 grams.
